I liked him as The Riddler but it wasn't one of my favorite movies of his. I think I like Ace V. 2 and Bruce Almighty the best.

Eternal Sunshine looks good but haven't seen it so I'd say Dumb and Dumber. It's his most hilarious movie if not THE most hilarious movie.

I havn't seen Ace Ventura: When Nature Calls or The Majestic, but, the others are pretty good. I have even started to tolerate The Cable Guy. At first I didn't really think The Mask was that great, but, after a few viewings, I've begun to like that, too. But, for classic Jim Carrey, I gotta go with Dumb & Dumber. The only one I really didn't like was The Grinch. I'm sorry, but if you're playing a villian you should act like it. I know it was really a kids film, but, still.
