Plo Koon vs. anyone. He didn't get any lightsaber action.

There was a scene that they took out of the AotC script where Plo Koon and Ki Adi Mundi led an infiltration of one of the Trade Federation control ship on Geonosis. If you look closely once all the Jedi have surrendered in the arena, these two are walked into the circle separately. This is all that remains of that sequence.

Shaak Ti ...same thing.

Mechanical Vader vs. at least one Jedi. But I understand why this wasn't included.
